SMASH “Carbonara”

Do you ever fancy a spaghetti carbonara but don’t want the heavy feeling from the pasta and the cream and don’t eat pork? That was me the other evening. The boys requested it for tea so I made their version and then got creative and made my Solutions version. I have to say I was impressed, especially as it was my first time doing it.

I posted the photo of it in my private support group on Facebook and the requests for the recipe started. So here goes… Oh I should say that most of the time I don’t measure quantities, so the figures below are approximate. Don’t be afraid to experiment with flavours – if you need a little bit more add it in. In that case remember that it is easier to add in extra than to take out ๐Ÿ˜‰

Ingredients

  • 6 Mushrooms
  • Half a Small Onion
  • 3 Turkey Rashers
  • 1 Cup of Homemade Cashew Nut Milk
  • 1 Carrot
  • 1 Courgette
  • Salt and Pepper to taste
  • Dessert Spoon of Mixed Herbs
  • Tablespoon of Coconut Oil
  • (if you wanted to add some garlic into this you could, so half a clove of garlic too)
  • (if you wanted it spicy, you could add in some chilli flakes too)

 

Method

  • Finely chop onion and mushrooms
  • Heat coconut oil on a large frying pan
  • Add onion and mushrooms once coconut oil is melted. Add salt, pepper and mixed herbs. Stir occasionally
  • Cook out for 2-3 minutes. As they are cooking out, slice the 3 turkey rashers into strips
  • Move the onions and mushrooms to outer edge of the pan and add the chopped turkey rashers into the middle.
  • Cook turkey rashers and then mix all together.
  • Turn down the heat and slowly add the cashew nut milk. The heat needs to be low as if it is too high the milk with separate. As it heats it will thicken. Keep the heat low.
  • As the milk is thickening use a julienne peeler to peel the carrot and courgette. (if you can’t do this quickly have it prepared before you start to fry things off)
  • Add the carrot and courgette into the frying pan and stir it all in for 30 seconds.
  • Serve in a bowl and accompany it with a gorgeous green side salad.

I know this is not your traditional spaghetti carbonara – and all I can think about is the scene on This Morning with Holly and Gino, and I giggle. This is a “SMASH” Carbonara, so I think we can get away with it.
