Broccoli, Leek and Pea Soup

You often hear that “Green Is Good” when it comes to food. It most certainly is and that is what this broccoli, leak and pea soup is. Not only is it good, it is amazing! It is quick and easy to make and highly nutritious. My kids love it and there is nothing nicer than a warming winter soup on a cold snowy day (like today  1/3/2018. My clients at my SMASH group also approved of it which is brilliant too. Serve it with the Solutions Healthy Bread and you have the perfect snack or lunch. Enjoy xx

Ingredients

  • 300g Broccoli 
  • 250g Frozen Peas
  • 175 g Leeks
  • 1 Tablespoon of Bouillon (reduced salt)
  • 9g Coconut Oil
  • Black Pepper to taste
  • 1.5 Litres of Boiling Water

Method

  • Wash Leeks and Chop up into small slices
  • Melt the coconut oil in a large heavy saucepan and add the chopped leeks and black pepper.
  • Stir the leeks and then reduce the heat. Let them sweat whilst you chop the broccoli into chunks (the great thing about this is that it doesn’t have to be chopped up finely.) You can also use the stalk of the broccoli which reduces wastage and increases the nutrition. Make sure that your stir the leeks occasionally so that they don’t burn whilst you are chopping the broccoli.
  • Add the chopped broccoli to the saucepan and stir in with the leeks.
  • Add the boiling water and sprinkle the bouillon in to the saucepan.
  • Place the lid on and let it simmer for 10 minutes.
  • Add the frozen peas to the saucepan and cover again.
  • Simmer for a further 5-7 minutes and then take off the heat.
  • Using a stick blender, blend the soup to the consistency that you would like. If you like your soup to be quite thin add in some extra water. I like my soup thick so I don’t add anything. If you like your soup “creamy” you could add some homemade cashew nut milk

Serve with the toasted solutions bread or sprinkle with sunflower seeds and enjoy.

This is one of the quickest and easiest recipes to ever make and yet it is so filling. Always make sure that you have some protein either before you eat your soup or with your soup. I sometimes chop up cooked chicken and sprinkle it on top of my soup like croutons.
